I can’t help but feel like coconut milk is a bit of a unicorn.
It is so easy to get, so easy on the wallet, and so delicious.
You could probably make it with a few ingredients from anywhere.
Yet, I always have a hard time buying anything from the grocery store.
I always want to try something new.
The fact is, coconut milk has always been my favorite dairy.
I grew up on dairy-free milk.
I remember as a kid, my mom would take me to a local supermarket to buy milk and I’d just go nuts.
I was obsessed.
I would go to the grocery stores in the morning and buy my favorite milk for my whole family and I would just go crazy.
And then my parents started to lose the dairy, and they started to eat healthier.
My mom was like, “I don’t want to be a dieter.
I want to eat more healthy food.”
And then my dad started getting in the habit, too.
And so, as my mom got older, she was like “I need to make sure I eat a lot of coconut milk.
So I’ll just go on my diet, and I’m not going to buy anything else.”
And that’s where I’ve been for most of my life.
My dad started to have health issues around the time of my first birthday, and he was diagnosed with pancreatic cancer.
So I was really excited.
And when I found out, I was like: “Oh my gosh, this is going to be really good.
I don’t have to eat this much.”
And I started getting my first coconut milk at the age of 17.
Fast forward about six months, and then I started to get really sick.
And my stomach just kind of went through the roof.
It was really hard.
It wasn’t something I ever really expected to go through.
I had to go to a hospital for two months and have to have my stomach drained.
It’s been a really long road.
I lost a lot, too, because I’ve had a lot going on.
My dad has been living on food stamps, so I had a big family of friends who were really struggling financially.
I’ve also had health issues.
It’s been crazy.
I have to tell myself that I’m really good at what I do, but I have a lot to live up to, and a lot that I want people to know about me.
But it’s not something that I am going to stop working on.
I am really excited about it.
Do you think you’ll ever stop?
I just think about it a lot.
The other day, my friends and I were eating ice cream in a restaurant in Chicago.
And the guy behind the counter was like to me, “You know what, this might be your last time.”
And so I said, “Oh yeah, I know.”
And he was like [smiling], “Yeah, I guess I’ll see you later, because you’re done.”
So, I think that will be my last coconut milk bar.
I think I’m going to make this last one.
